Truffle omelette recipe

A recipe from agriturismo in Umbria.

Ingredients:
- Eggs - 6
- salt
- Black pepper
- Garlic - 1 clove
- Extra virgin olive oil - 4 tbsp
- Black Truffle - 50 gr

Wash the truffles in cold water, rub with a brush, dry and grate. In a bowl, beat eggs with salt and pepper, add the chopped truffles and mix together. In a nonstick skillet to brown the garlic in the oil, at this point, remove the garlic and add the beaten eggs. Cook the omelette on both sides quickly, so that it is well cooked on the outside but soft inside.
